Chicken Avocado Salad

This is a recipe was inspired by all the posts I was seeing on Pinterest. Just the description had everything I loved: lime, chicken, and avocado. Just thinking about it made my mouth water. Unfortunately every time I saw the picture, I had a difficult time find the recipe. It would show wonderful pictures, but no way of making the dish. Therefore, I started my test kitchen.

The chicken can be prepared however you are comfortable making shredded chicken. Personally, I like to coat the chicken with salt and pepper and throw it on a greased frying pan over medium heat. It takes about 10 minutes to cook, depending on the size of the chicken. While the chicken is going, add the yogurt, chopped green onions, avocado and a dash of garlic powder in a medium size bowl. I like to add “almost all” the yogurt, leaving some on the side to add later. Mix the ingredients together, and slowly add the juice of one lime. Taste the sauce as you go, making sure the ingredients have enough flavor while not adding too much lime. If the taste test allows, add the remaining amount of yogurt.

Once the chicken is complete, shred on a plate and allow the meat to fully cool. After the meat is cool, add to the sauce. Mix together and do another taste check. I find that every time I make this recipe, it needs something a little different each time. Sometimes the lime didn’t have as much flavor or it was over powering and need more yogurt to balance it out. The only thing to remember is, you can add yogurt, but you can’t take it out.

Once you have the flavor to perfection, add the cilantro and serve!

Ingredients:
2 chicken breast (about 2 cups)
1 avocado
¼ to ½ cup of greek yogurt
1 lime
½ teaspoon garlic powder
3 green onions, chopped
3 tbsp. of cilantro
