Olive Oil Pasta

This was one of the first recipes I ever experimented and made. It was when I was in college and in desperate need for some home cooking. My mom is an amazing Italian cook, and my favorite meals always involved pasta. However, I did not have the time to come up with a traditional Italian 8 course meal while trying to survive my first year of college. This recipe is made in less than 30 minutes and makes a large batch that I love to take for lunch.

Bring 4 quarts of water to boil – remember to add a dash of salt to the water! Some people say you should add olive oil to the water so the pasta does not stick. In my opinion, you are wasting delicious olive oil by adding it to the water. Just don’t do it! With a big enough pot and enough water, you should be just fine without the oil. Add half the box of spaghetti once the water is boiling and cook it until the noodles are soft.

Seasoned Veggies
While waiting for the water to boil and the spaghetti to cook, set up your oven for broil. Follow your manufacture instructions as they differ from stove to stove. Add large slices of onion, peppers, tomatoes, and sausage into a large Ziploc bag. Coat the ingredients with olive oil (aren’t you happy you didn’t waste the oil in the spaghetti water) oregano, garlic powder, basil, sausage and red pepper flakes. Now take out your day’s aggression on that Ziploc bag and SHAKE!! Mix together all the ingredients and when everything is evenly coated, put everything on a baking sheet. Broil the mixture and turn the veggies and sausage, five minutes on each side. They will start to develop the desired charred look.
Olive Oil Pasta Finished
When the peppers and pasta are done, mix together and add more olive oil, if needed. That’s it! You now have a great, hearty meal!
Ingredients:
½ box of spaghetti
1 Onion
3 tomatoes
Green Pepper
Yellow Pepper
Red Pepper
Kielbasa Sausage
3 cloves minced garlic
Basil
1 tbsp. oregano
Garlic Powder
Red Pepper Flakes
