Spinach Dip


If you go to the supermarket you will find plenty of options for dip, that comes with a price. Normally if you are planning on having guests over, or going to a party, you will need to buy several to be able to feed everyone. However, with this recipe you can make a large amount that will feed everyone, plus avoid all the preservatives in the store brand dip. 

The process is quick and shouldn’t take more than 10 minutes. Heat oil over medium-high heat in a large skillet. Add the shallots and garlic to the pan and cook for 1 minute. Then add the spinach and heat for about 2 minutes, just enough to soften the spinach. The spinach shouldn’t be wilted or brown, you are just giving it a quick cook to soften and get ready to process easily.

Allow the spinach to cool slightly, and add to the food processor for a quick blend (press the pulse button 5 times). Add the remaining ingredients and pulse until it is the texture is to your preference and the ingredients are consistently mixed. Give it a taste, and add more salt and pepper if needed. Spoon the dip into a large serving bowl, and consume immediately or place in the fridge until ready.

Ingredients
2 tbsp olive oil
¼ cup chopped shallots
1 tbsp minced garlic
12 oz spinach leaves
½ tsp salt
2 tsp lemon juice
1 cup Greek yogurt
½ cup feta cheese
2 tbsp chopped dill
Fresh ground black pepper
